چکیده

To meet the consumer demand for functional drinks with bioactive compounds, this study aimed to evaluate addition of Lactiplantibacillus plantarum LP299V, Lacticaseibacillus rhamnosus GG and Lactobacillus acidophilus in mate tea. The viability probiotic bacteria, microbiological physicochemical characteristics, vitro resistance gastrointestinal tract antioxidant capacity teas were evaluated during 28 days. Unlike L. rhamnosus, did not remain viable product. characteristics maintained over time. Phenolic compounds tea containing identified by HPLC. There was stability phenolic flavonoid content At end assay, there 4.52 Log CFU/mL plantarum, suggesting that consumption 100 mL may provide > 6.0 probiotic. Mate can carrier plantarum. is an increase search consumers health at same time, a growing alternatives carriers probiotics, due individuals intolerance allergy dairy products, vegetarians others. This confirms possibility using tea, widely consumed Brazil, as positive making it attractive alternative beverage matrix.

Characterization of the ecological role of genes mediating acid resistance in Lactobacillus reuteri during colonization of the gastrointestinal tract.

Rodent-derived strains of Lactobacillus reuteri densely colonize the forestomach of mice and possess several genes whose predicted functions constitute adaptations towards an acidic environment. The objective of this study was to systematically determine which genes of L. reuteri 100-23 contribute to tolerance towards host gastric acid secretion. Genes predicted to be involved in acid resistanc...

Bacillus probiotics: spore germination in the gastrointestinal tract.

Spores of Bacillus species are being used commercially as probiotics and competitive exclusion agents. Unlike the more commonly used Lactobacillus-type probiotics, spores are dormant life forms. To address how spore probiotics might function we have investigated whether spores can germinate in the gastrointestinal tract by using a murine model. Using a genetically engineered chimeric gene, ftsH...

Chemical signaling in the gastrointestinal tract

Chemical signaling via the production of small molecules such as hormones has been studied in detail in higher organisms. These molecules have important functions in maintaining physiological homeostasis as well as allowing organisms to respond to external insults. Virtually every living cell produces hormone-like diffusible small molecules that can be used to convey messages to neighboring cel...

Metabolism of tea flavonoids in the gastrointestinal tract.

There is considerable interest in the bioavailability of flavan-3-ols such as tea catechins and their bioactivity in vivo. Although flavanols such as catechin and epicatechin have long been characterized as powerful antioxidants in vitro, evidence suggests that these compounds undergo significant metabolism and conjugation during absorption in the small intestine and in the colon. In the small ...
